  • Poor absorption: Curcumin is notoriously difficult for the body to absorb. Even with black pepper (which boosts absorption), the amount reaching your gut is minuscule compared to a concentrated supplement.
  • The rest of the meal helps: Curries are often packed with vitamin C–rich ingredients like tomatoes, lemon juice, or amchur (dried mango powder) — all of which enhance iron absorption. Plus, if your curry contains iron-rich foods like legumes, lentils, or meat, the iron content of the meal far outweighs what the tiny amount of turmeric could bind.

The only rule: If you're taking prescription oral iron supplements, avoid taking the pill at the exact same time as a turmeric-heavy curry. Separate them by 2 to 3 hours to ensure the concentrated iron absorbs fully, while you enjoy your curry as a delicious, healthy meal.
